<p>I&#8217;m very excited about today&#8217;s post and partnering with some very talented bloggers and Paleo mom&#8217;s, Stacy at <a href="http://paleoparents.com/" target="_blank">Paleo Parents</a> and Jenni at <a href="http://urbanposer.blogspot.com/" target="_blank">Urban Poser</a>.</p>
<p>Stacy reached out to Jenni and I and we all tossed around some ideas and decided to each feature a &#8220;course&#8221; to give you a full New Years Eve menu.  I&#8217;m featuring an appetizer with these Sundried Tomato Herb Chicken Sliders surrounded by a Paleo Herb Bun.  Jenni took on the main course of a chicken pot pie &#8211; which sounds amazing!  I haven&#8217;t had chicken pot pie since cutting gluten out last January so I&#8217;m excited to try her recipe.  And the wonderful Stacy did a dessert &#8211; a take on Jenni&#8217;s marshmallows, a <a href="http://paleoparents.com/2011/delicious-urban-parents-nye-menu/" target="_blank">S&#8217;more Marshmallow</a>! Yum!</p>
<p>Here is a glimpse at these fabulous ladies recipes.</p>
<p>Jenni at <a href="http://urbanposer.blogspot.com/" target="_blank">Urban Poser</a> used leftovers to make an amazing looking main course, <a href="http://urbanposer.blogspot.com/2011/12/Delicious-Urban-Parents-NYE-Menu.html" target="_blank">Chicken Pot Pie</a>.  Can&#8217;t wait to try this!</p>

<p><em>Warm, savory and the perfect match to a cold winters day&#8230;Try this grain free rendition of the classic &#8216;Pot Pie&#8217;. These personal sized pies are chock full of hearty chicken, seasoned vegetables, and thick (grain free) gravy. Then they&#8217;re topped off with a flaky almond flour crust, just like my Grandma used to make&#8230;only better for you!</em></p>

But, if you&#8217;re into that sort of thing, by all means &#8211; eat them beside a bonfire and let the chocolate melt in your hand instead of your mouth! But first, you have to make them&#8230;</em></p>

<p><strong>Sundried Tomato Herb Chicken Sliders</strong></p>
<p>1 pound ground chicken</p>
<p>1/4 cup sundried tomatoes (packed in olive oil), chopped</p>
<p>2 slices bacon, just cooked and crumbled</p>
<p>1 teaspoon fresh thyme, chopped</p>
<p>1/2 tablespoon fresh basil, chopped</p>
<p>1 teaspoon fresh garlic, finely minced</p>
<p>1/2 teaspoon sea salt</p>
<p>1/4 teaspoon fresh ground black pepper</p>

<p>Fresh Baby Spinach</p>
<p>Garlic Herb Aioli (optional), recipe below</p>
<p><strong>To make burgers:</strong></p>
<p>Heat a nonstick grill pan over medium high heat.</p>
<p>In a large bowl, add chicken, sundried tomatoes, bacon, thyme, basil, garlic, salt and pepper.  With a fork combine the ingredients make sure not to completely over work the slider mixture.</p>
<p>Form mixture into small sliders and place on the preheated grill pan and grill sliders for 3 to 4 minutes on each side until slider is cooked through.</p>

<p><strong>Garlic Herb Aioli</strong></p>
<p>1 egg</p>
<p>1 tablespoon fresh squeezed lemon juice</p>
<p>1/4 teaspoon ground mustard powder</p>
<p>1/2 cup avocado oil</p>
<p>1/2 cup light olive oil</p>
<p>1/2 tablespoon garlic, minced</p>
<p>1 tablespoon rosemary, minced</p>
<p>1/2 tablespoon fresh basil, chopped</p>
<p>salt and pepper to taste</p>
<p><strong>To make aioli: </strong></p>
<p>In a food processor, process egg, lemon juice, and mustard powder.</p>
<p>Slowly add the avocado oil and olive oil while processing to fully emulsify.  When the oil has all emulsified and you have a creamy mayonnaise, add salt and pepper, and continue to blend</p>
<p>Add garlic, rosemary, and basil and process until smooth.</p>

<p>Back with one more Christmas treat and probably the last I&#8217;ll post for awhile.  Starting in January I&#8217;ll be joining some of my fellow CrossFit pals in a MVT (Meat, Vegetables, Training) Challenge, a 2-month challenge to follow a strict Paleo diet.  A diet very similar to the <a href="http://whole9life.com/category/whole-30/" target="_blank">Whole30 program</a>.  Eliminating the common things in a Paleo diet (gluten, soy, dairy, legumes, and sugar).  It also mean eliminating the &#8220;treats&#8221;.  In the end of the challenge we all come back to see who leaned out the most along in completing a challenging WOD.  Sound fun?  It does to me!  But before I start the challenge and because it&#8217;s Christmas and because I like to think I&#8217;ve been a pretty good girl I made my last treats of the year.  And let me tell you&#8230;. these treats are soooooo good!  The center I like to compare to a Larabar, but formed into balls instead of a bar.  Then dipped in dark chocolate and sprinkled with shredded coconut.  YUM!!!  A treat this girl could get in major trouble having around.  If you give these a try for your last treat of the year, enjoy!!</p>
<p>Now let&#8217;s talk about the dark chocolate.  I found <a href="https://www.theochocolate.com/store/products/chocolate-bars/classic-collection/70-dark-chocolate" target="_blank">Theo Dark Chocolate Bars </a>at my local Whole Foods.  Their dark chocolate bars are organic, soy-free, dairy-free, and gluten-free.  I highly recommend them for these little bites!  Another option for a soy-free, gluten-free, dairy-free chocolate is <a href="http://www.enjoylifefoods.com/" target="_blank">Enjoy Life</a>. </p>
<p>Ok, my lovely readers I hope you and your family have a very wonderful holiday!  I&#8217;ll be missing in action for a few days as I head off on a little vacation with my family.  It&#8217;s a much needed vacation for us to all spend time together.  Our lives have been very hectic so we are going to slow down and enjoy each other for a few days at a very magical place where fairy tales come true!  That&#8217;s right DISNEY!!  We are all very excited! </p>

<p><strong>Dark Chocolate Coconut Bites</strong></p>
<p>10 medjool dates, pitted</p>
<p>1/2 cup pecans, chopped</p>
<p>1/2 cup almond slices</p>
<p>1/4 cup shredded unsweetened coconut (plus more for topping)</p>
<p>2 tablespoons dark chocolate, melted</p>
<p>1 teaspoon vanilla extract</p>
<p>1 teaspoon cinnamon</p>
<p>1 to 2 tablespoons water</p>
<p>1/3 cup chocolate chips such as Enjoy Life Chips (optional)</p>
<p>2 bars dark chocolate, melted</p>

<p><strong>Instructions:</strong></p>
<p>In the bowl of a food processor place dates, pecans, almonds, coconut, melted dark chocolate, vanilla extract, and cinnamon.  Process ingredients until well blended.  Add 1 tablespoon of water at a time to the bowl until a ball of dough forms.  Once dough is formed stir in chocolate chips, if using.</p>
<p>Form dough into tablespoon size balls.  You should be able to make about 10 to 12 balls.  Once formed place in a container and freeze for 15 to 20 minutes until solid.</p>
<p>In a double broiler, melt dark chocolate.  Take the balls out of freezer and coat a bite in the melted dark chocolate and place on wax paper.  Sprinkle coconut flakes on top of the bite.  Repeat with the remaining bites.  Place in the freezer or refrigerator until the bites have set.</p>
<p>When ready to enjoy, allow the bites to come to room temperature.  Or you can enjoy right out of the freezer or refrigerator.</p>

<p>I can’t believe Christmas is almost here.  Yikes!  I feel like there is so much still to do.  Do you feel that way?  Please, please tell me I’m not the only one. </p>
<p>Do you need a quick homemade gift/treat to hand out to friends and family that happens to Paleo friendly?  That is if you can actually package them up and give to your friends and family and not eat them yourself.  These little dark chocolate almonds are the ticket.  They only require a few ingredients and boy do they taste good!  The ingredients happen to be good for you too…well I like to think they are a whole lot better than those prepackaged chocolate almonds you find on the shelf.  The dark chocolate is packed with antioxidants, almonds are loaded with vitamin E and magnesium, and raw cacao is linked to numerous health benefits.  Score for your friends and family (or you)! Package them up in a jar or in a food baggie tie with a pretty ribbon and you have a gift to hand out.</p>

<p><strong>Dark Chocolate Cacao Cinnamon Dusted Almonds</strong></p>
<p>1 ½ cups unsalted roasted almonds</p>
<p>1 ½ cups dark chocolate – about 2 dark chocolate bars (I used this 70% dark chocolate bar)</p>
<p>2 tablespoons cacao powder</p>
<p>1/2 tablespoons ground cinnamon</p>

<p><strong>Instructions:</strong></p>
<p>Add the chocolate to a double broiler over medium-high heat.  Stirring the chocolate constantly until it is melted.</p>
<p>Remove from heat and stir almonds into the dark chocolate until well coated.</p>
<p>Place the almonds on a parchment lined or wax lined baking sheet.  Just a note: one that can fit inside your refrigerator. </p>
<p>Refrigerate the almonds for 30 to 60 minutes or until the chocolate hardens.  If you need things to move quicker than the 30-60 minutes place the chocolate coated almonds in the freezer. </p>
<p>Place the chocolate covered almonds in a large bowl and sprinkle with cacao powder and cinnamon.  Toss until well coated.</p>

<p>Here is a quick and easy way to package your almonds.  Recycle jars, place almonds inside and tie with ribbon and tag and you have a quick and easy gift. </p>

<p>During Christmas, my favorite cookie to make (and eat) are <a href="http://www.multiplydelicious.com/thefood/2010/12/chewy-chocolate-gingerbread-cookies/" target="_blank">Chewy Chocolate Gingerbread cookies</a> but this was before switching to the Paleo lifestyle.  With that being said I was on a mission this year to make a version of my favorite cookie…. but Paleo-ized.  I have to say the results sent me to dreamland.  After taking the first bite and proceeding to eat the cookie in record time I didn’t miss the “old” version at all!  That says a lot and I bet if you made these for your friends and family they wouldn’t believe you that they were Paleo.  In that case, don’t even tell them…it’s your little secret.  That’s what I did when my husband bit into one and proceeded to say….oh wow these are good.  However, my husband knows all too well if I bake these days it’s most likely Paleo and he was then pleasantly surprised.  Maybe I might convince him on walking down the Paleo road after all.  Hmmmm…..might have to take a little more work, perhaps more of these cookies.  Only kidding here folks as we all know these little cookies are a special treat.  And since it’s the holidays, a special treat is in order.  Now for those of you that prefer a crispy and crunchy cookie, these aren’t for you at all.  These are what the title says….chewy!  And very soft.  Which in my opinion is the way a cookie is supposed to be….like I’ve said in the past when sharing other <a href="http://www.multiplydelicious.com/thefood/2011/09/paleo-banana-chocolate-chip-cakies/" target="_blank">chewy and soft cookies</a>.</p>
<p>I was originally planning to bring the <a href="http://www.multiplydelicious.com/thefood/2011/11/coconut-banana-chocolate-chip-muffins/" target="_blank">Coconut Banana Chocolate Chip Muffins</a> to the upcoming holiday brunch at <a href="http://crossfitdelraybeach.com" target="_blank">my Crossfit gym</a>, but these might be made instead.  Or maybe I’ll just bring both.  Choices….</p>

<p><strong>Chewy</strong> <strong>Chocolate Gingerbread Cookies</strong></p>
<p>10 medjool dates, pitted</p>
<p>1/3 cup coconut oil</p>
<p>2 eggs</p>
<p>1 tablespoon molasses</p>
<p>1 teaspoon vanilla extract</p>
<p>½ cup almond meal</p>
<p>¼ cup cacao powder</p>
<p>2 tablespoons coconut flour</p>
<p>1 teaspoon baking soda</p>
<p>½ teaspoon baking powder</p>
<p>¼ teaspoon sea salt</p>
<p>1 teaspoon ground ginger</p>
<p>1 teaspoon ground cinnamon</p>
<p>¼ teaspoon ground cloves</p>
<p>2/3 cup dark chocolate chips/chunks (I used Enjoy Life New Chocolate Chunks)</p>

<p><strong>Instructions:</strong></p>
<p>Preheat oven to 350 degrees and line two baking sheets with parchment paper.</p>
<p>Add dates to a small bowl with 1 tablespoon water and microwave on high for 30 seconds.  Mash dates with a fork and add 1 tablespoon of maple syrup and mash more.</p>
<p>Add date mixture, coconut oil, eggs, molasses, and vanilla extract to a food processor and pulse until smooth. </p>
<p>In a small bowl, whisk together all the dry ingredients (almond flour/meal through cloves).  Add dry ingredients to the date mixture and process mixture until well combined, scraping the bowl as needed.  Stir in dark chocolate.</p>
<p>Spoon tablespoons of dough onto prepared baking sheet.  Leave at least an inch and half of room for the cookies to spread.</p>
<p>Bake 8-10 minutes until puffy.  The cookies will be soft but will harden slightly when cooled.  Cool the cookies on the baking sheet for 10 to 15 minutes before removing.  Release the cookies from the pan with a spatula.</p>
<p>These cookies are best kept in the refrigerator (if not eaten right away) or they freeze well.</p>
<p> Makes 15 to 18 cookies</p>

<p>As promised I’m back with a Halloween treat for all you out there!  It’s so hard to believe Halloween is Monday.  I don’t know about you, but I’m amazed how quickly October flew by!  I’ve been thinking about a Paleo Halloween treat for Halloween since last month!  Reese’s cups are a favorite of my husband so these were really inspired by him.  I wanted to create something that was Paleo friendly so we could avoid having those Reese’s cup around the house which are packed with all things non-paleo and not good for us.  I then remembered that I got these <a href="http://www.candylandcrafts.com/halloweencandylollipopmolds.htm">Halloween tray’s</a>from Michael’s last year as they were clearing out of all of their Halloween products.  I knew they would come in handy this year!  They are actually tray’s for chocolate dipped oreo’s but I won’t be using them for that so why not these chocolate almond cups!  There are several ways you can make these that don’t involve this exact tray.  You can use the candy molds that actually look like <a href="http://www.amazon.com/Medium-Peanut-Butter-Occasions-Chocolate/dp/B000EDS064">Reese’s cups</a>or you could even use the bottom of a silicone muffin pan.  These don’t take long and you only need two things…chocolate and almond butter!  Oh, and a mold.  But seriously there is no excuse to not have a Paleo Halloween treat in your house.  In my case a Halloween treat for the hubby and kids that didn&#8217;t involve a bag of not so great Halloween candy from the local Target.  Oh, and the reason for the condensation on these treats is because I had to photograph them fast!  I had three people in the background waiting patiently to try them.  They didn&#8217;t last too long either!</p>

<p><strong>Chocolate Almond Cups</strong></p>
<p>1 cup (about 4 bars) Enjoy Life Dark Chocolate Bars (or 72% dark chocolate)</p>
<p>1/2 cup almond butter</p>
<p><strong>Instructions:</strong></p>
<p>Over very low heat, melt chocolate in a double broiler.  Or you can heat the chocolate in the microwave until melted. </p>
<p>With clean, unused paint brush, paint chocolate into candy molds.</p>
<p>Place in freezer for 10 minutes to allow the chocolate to set.  After 10 minutes if the chocolate hasn&#8217;t set place back into freezer until it is sold.</p>
<p>Fill hardened chocolate molds with almond butter.</p>
<p>Carefully fill in the top of the mold, over almond butter, with additional chocolate.</p>
<p>Place in freezer for 10 to 20 minutes until completely hardened.</p>
<p>Carefully pop candy out of their molds and serve.  Enjoy!</p>

<p><strong>Paleo Apple Pear Crisp </strong></p>
<p>1 cup of <a href="http://www.paleopeople.com/gourmet-granola/apple-crisp-granola?zenid=uv39hlk87ecgpdt75p2rd0sk51">Paleo People Apple Crisp</a></p>
<p>½ cup almond flour</p>
<p>2 teaspoons ground cinnamon</p>
<p>1 teaspoon ground nutmeg</p>
<p>2 teaspoons vanilla extract</p>
<p>1 to 2 teaspoons honey (optional)</p>
<p>2 ½ tablespoons coconut oil</p>
<p>2 pears, peeled and cored</p>
<p>2 apples, peeled and cored</p>
<p>1 ½ teaspoons apple pie spice (or ground cinnamon)</p>
<p>Juice from ½ of lemon</p>

<p><strong>Instructions:</strong></p>
<p>Preheat oven to 350.</p>
<p>In a small bowl combine the Paleo People Apple Crisp, almond flour, cinnamon, nutmeg, vanilla extract, honey (if using), and coconut oil and using a fork blend together.  The crumbs should be wet, if they are still dry add ½ tablespoon of coconut oil and blend with fork again. </p>
<p>Peel and core the apples and pears and cut into small pieces.  The size of the pieces depend on how chunky you prefer your crisp.  I like mine to be pretty finely chopped.  Place the diced apples and pears in a small bowl and toss with lemon juice and apple pie spice (or cinnamon).</p>
<p>In 4 individual ramekins, place apple/pear mixture filling about ¾ full.  Then top each with the Paleo People Crumb mixture.  Cover each ramekin with aluminum foil and place on a baking sheet.  Bake for 20 to 25 minutes.  Then remove aluminum foil and bake for an additional 15 minutes until the tops are golden.</p>
<p> Allow to cool slightly before serving.  Top with <a href="http://www.multiplydelicious.com/thefood/2011/09/pumpkin-ice-cream-sandwich-cookies-giveaway/" target="_blank">Paleo Pumpkin Ice Cream</a> or other Paleo friendly ice cream of choice.</p>

<p>It’s Friday, the end of the work week, so why not end it with a Paleo treat!  I actually made these back in August and haven’t posted them….shame on me because they are delicious!  My whole thought process was I didn’t want to shower you with treats since Paleo is not about the treats but all about the other good for you stuff.  I also knew I would be going away on vacation which meant I would be away from my kitchen which meant no cooking.  I did some extra cooking before my trip so I would have enough recipes to share with all of you.  So here we go…a Paleo treat that is so worth the wait!  I call it a brownie but it’s really almost like a fudgy chocolate bar.  It’s no bake and easy to put together and even easier to eat.  Warning: they can be a little addicting.  My little ones loved these and they weren’t around too long.  Which was perfectly ok with me because it meant they weren’t around too long for me to eat.  I was also perfectly ok with that because these bars are a whole lot healthier than some of those other things out there on the market for kids. </p>

<p>2 ¼ cup pecans, lightly toasted</p>
<p>½ unsweetened cocoa powder</p>
<p>½ teaspoon ground cinnamon</p>
<p>15 large medjool dates, pits removed</p>
<p>1 small to medium ripe banana (about 1/3 cup)</p>
<p>1 tablespoon vanilla extract</p>
<p>1 tablespoon honey</p>
<p>¼ cup dried cranberries</p>
<p>1/3 cup Enjoy Life Chocolate Chips, plus more to sprinkle on tops of bars</p>

<p><strong>Instructions:</strong></p>
<p>Blend pecans, unsweetened cocoa powder and cinnamon in food processor until combined and coarsely ground.</p>
<p>Add in dates and banana and process until blended into dry ingredients.</p>
<p>Process in vanilla and honey until well combined.</p>
<p>Stir or work in dried cranberries and chocolate chips with spoon or by hand.</p>
<p> Press mixture into a 8&#215;8-inch baking dish and sprinkle with additional chocolate chips, gently pressing down the chocolate chips.  Freeze for 1 hour, or until firm, then cut into squares. </p>

<p>As you read this post I will be flying high in the sky on route to Arizona&#8230;.to celebrate my birthday!  My mom called me a couple months ago with the idea of a getaway for my birthday.  Not just any getaway but a spa and hiking getaway to Sedona, Arizona.  It didn&#8217;t take much convincing and I&#8217;ve been excited ever since.  But I didn&#8217;t want to leave without a treat.  Since it&#8217;s my birthday a treat is needed and this treat comes in the form of a Paleo-ish Pumpkin Cookie Sandwich with Paleo Pumpkin Ice Cream sandwiched in between&#8230;.I&#8217;m telling you this is the perfect treat to celebrate a birthday with in a Paleo fashion.  Since I&#8217;m leaving on my birthday we had to celebrate in my house and my request was not to have the traditional cake or ice cream so instead we had these!  They were heavenly and I have to say I&#8217;m so happy it&#8217;s that time of the year for pumpkin.  I love the stuff!</p>

<p>Now let&#8217;s get to the treat.  First off the cookies!  Now there are a couple ways you can make these.  With or without the chocolate chips.  I did half the cookies with and half without.  Either way they are delicious.</p>

<p><strong>Paleo Pumpkin Spice Cookies</strong></p>

<p>2 cups blanched almond flour</p>
<p>1/2 teaspoon salt</p>
<p>1/2 teaspoon baking soda</p>
<p>1 tablespoon pumpkin pie spice, plus more for sprinkling on tops of cookies</p>
<p>1/2 cup pure pumpkin puree</p>
<p>1 small ripe banana, mashed</p>
<p>1/4 cup maple syrup</p>
<p>1 tablespoon vanilla extract</p>
<p>1/3 cup coconut oil</p>
<p>1/2 cup Enjoy Life Chocolate Chips (optional)</p>
<p><strong>Instructions:</strong></p>
<p>Preheat oven to 350 and line a baking sheet with parchment paper.</p>
<p>In a large bowl whisk together the almond flour, baking soda, salt, and pumpkin pie spice.</p>
<p>In a small bowl mix together pumpkin puree, mashed banana, maple syrup (if using), vanilla extract. </p>
<p>Mix wet ingredients into dry ingredients and stir until combine.  Then add melted coconut oil and stir to incorporate.  If you are using chocolate chips stir those into the batter.</p>
<p>Drop spoonful of batter (about 1 to 2 tablespoons in size) onto prepared baking sheet.  Sprinkle the tops of the cookies with additional pumpkin pie spice.  Bake cookies for 25 to 30 minutes until golden.</p>
<p>Cookies are best kept in a airtight container in the refrigerator. </p>

<p>1 can of coconut milk</p>
<p>1/2 cup pumpkin puree</p>

<p>In a bowl whisk together all ingredients until well combine.</p>
<p>Pour into the bowl of a ice cream machine and follow the directions of your ice cream machine. </p>

<p><strong>To assemble sandwiches:</strong></p>
<p>On one side of the bottom of a cookie place a scoop of ice cream.  Take another cookie and place flat side down on top of ice cream and slightly press down.  Eat right away or wrap in plastic wrap or airtight container and store in freezer. </p>
<p><em>Note: It&#8217;s best to assemble sandwiches when ice cream is soft.</em></p>

<p>Hi everyone!  Sorry I have been missing in action.  The family and I took some time off and headed out for a little vacation.  We headed to Charleston, SC to visit family and friends and it was a much needed break for us all.  We had a wonderful time but the girls especially had a great trip.  They got to see their cousins who they hadn&#8217;t seen since they were 9 months old.  So basically it was their &#8220;first&#8221; time meeting them.  Their cousins live in California so the distance is pretty far between us and visits are hard to come by.  So this trip was extra special for not only them but the family too.  The 5 cousins (all girls) got along great and never got tired of playing together.  It was really great to see!  But it made leaving that much more difficult.  We were all sad to leave but we are hoping the next time we see everyone will be sooner than later.  As we were driving to the airport both of the girls said next time they want to play with their cousins &#8220;lots and lots of days&#8221;.  Very cute and they meant every word.  The promise is there so now it&#8217;s our turn to schedule it.</p>
<p>Now let&#8217;s talk about these chocolate cookie pops.  I know you are all probably really tired of all the ice cream, sorbet, and all the other cold treat recipes that I have been posting lately but since July is National Ice Cream Month and it&#8217;s super hot outside I thought it was the perfect excuse.  So here is one  cool treat.  These were fun to make and the little ones joined me in the kitchen to help.  They loved putting the sticks in and putting the cookie crumbs on top of the pops but I think their favorite part was eating them.  Warning to all with children who eat this&#8230;.they are messy!  Take these outside and be sure to have the sprinkler handy so they can hop in and rinse their chocolate hands and faces off afterwards.  These are healthy little summer time treats that keep everyone cool.  Hope you enjoy!</p>

<p><strong>Chocolate Cookie Pops</strong></p>

<p> 1 cup unsweetened vanilla almond milk</p>
<p>1 cup light coconut milk</p>
<p>1 tablespoon unsweetened cocoa powder</p>
<p>1 tablespoon packed light brown sugar</p>
<p>1 tablespoon organic cane sugar</p>
<p>¼ teaspoon ground cinnamon</p>
<p>Pinch of Salt</p>
<p>2 ounces dark chocolate, finely chopped</p>
<p>1/2 cup Chocolate Cookies of choice (I used these <a href="http://www.multiplydelicious.com/thefood/2011/07/chocolate-almond-ice-cream-sandwiches/" target="_blank">Gluten-Free Chocolate Cookies</a>), crumbled</p>
<p><a rel="attachment wp-att-2801" href="http://www.multiplydelicious.com/thefood/2011/07/chocolate-cookie-pops/poptop/"><img class="alignnone size-full wp-image-2801" title="poptop" src="http://www.multiplydelicious.com/thefood/wp-content/uploads/2011/07/poptop.jpg" alt="" width="500" height="538" /></a></p>
<p><strong>Instructions:</strong></p>
<p>In a saucepan over medium-high heat, warm the almond milk, coconut milk, cocoa powder, brown sugar, sugar, cinnamon, and salt, stirring occasionally until the mixture comes to a boil and the sugar has completely melted.  Remove from the heat, add chopped chocolate, and stir until smooth and chocolate has melted.  Let cool to room temperature. </p>
<p>If you don’t have conventional ice pop molds, use paper cups and pour mixture into cups.  When the pops are partially frozen (about 45 minutes to hour after placing in freezer) place sticks into the center of pops.  Also, take a cookie crumbs and place on the tops of the pops, gently pressing down to adhere the crumbs to the pops.  Freeze pops until solid, at least 3 hours.</p>
<p> Makes about 6 to 9 ice pops.</p>
