<p>During Christmas, my favorite cookie to make (and eat) are <a href="http://www.multiplydelicious.com/thefood/2010/12/chewy-chocolate-gingerbread-cookies/" target="_blank">Chewy Chocolate Gingerbread cookies</a> but this was before switching to the Paleo lifestyle.  With that being said I was on a mission this year to make a version of my favorite cookie…. but Paleo-ized.  I have to say the results sent me to dreamland.  After taking the first bite and proceeding to eat the cookie in record time I didn’t miss the “old” version at all!  That says a lot and I bet if you made these for your friends and family they wouldn’t believe you that they were Paleo.  In that case, don’t even tell them…it’s your little secret.  That’s what I did when my husband bit into one and proceeded to say….oh wow these are good.  However, my husband knows all too well if I bake these days it’s most likely Paleo and he was then pleasantly surprised.  Maybe I might convince him on walking down the Paleo road after all.  Hmmmm…..might have to take a little more work, perhaps more of these cookies.  Only kidding here folks as we all know these little cookies are a special treat.  And since it’s the holidays, a special treat is in order.  Now for those of you that prefer a crispy and crunchy cookie, these aren’t for you at all.  These are what the title says….chewy!  And very soft.  Which in my opinion is the way a cookie is supposed to be….like I’ve said in the past when sharing other <a href="http://www.multiplydelicious.com/thefood/2011/09/paleo-banana-chocolate-chip-cakies/" target="_blank">chewy and soft cookies</a>.</p>
<p>I was originally planning to bring the <a href="http://www.multiplydelicious.com/thefood/2011/11/coconut-banana-chocolate-chip-muffins/" target="_blank">Coconut Banana Chocolate Chip Muffins</a> to the upcoming holiday brunch at <a href="http://crossfitdelraybeach.com" target="_blank">my Crossfit gym</a>, but these might be made instead.  Or maybe I’ll just bring both.  Choices….</p>

<p><strong>Chewy</strong> <strong>Chocolate Gingerbread Cookies</strong></p>
<p>10 medjool dates, pitted</p>
<p>1/3 cup coconut oil</p>
<p>2 eggs</p>
<p>1 tablespoon molasses</p>
<p>1 teaspoon vanilla extract</p>
<p>½ cup almond meal</p>
<p>¼ cup cacao powder</p>
<p>2 tablespoons coconut flour</p>
<p>1 teaspoon baking soda</p>
<p>½ teaspoon baking powder</p>
<p>¼ teaspoon sea salt</p>
<p>1 teaspoon ground ginger</p>
<p>1 teaspoon ground cinnamon</p>
<p>¼ teaspoon ground cloves</p>
<p>2/3 cup dark chocolate chips/chunks (I used Enjoy Life New Chocolate Chunks)</p>

<p><strong>Instructions:</strong></p>
<p>Preheat oven to 350 degrees and line two baking sheets with parchment paper.</p>
<p>Add dates to a small bowl with 1 tablespoon water and microwave on high for 30 seconds.  Mash dates with a fork and add 1 tablespoon of maple syrup and mash more.</p>
<p>Add date mixture, coconut oil, eggs, molasses, and vanilla extract to a food processor and pulse until smooth. </p>
<p>In a small bowl, whisk together all the dry ingredients (almond flour/meal through cloves).  Add dry ingredients to the date mixture and process mixture until well combined, scraping the bowl as needed.  Stir in dark chocolate.</p>
<p>Spoon tablespoons of dough onto prepared baking sheet.  Leave at least an inch and half of room for the cookies to spread.</p>
<p>Bake 8-10 minutes until puffy.  The cookies will be soft but will harden slightly when cooled.  Cool the cookies on the baking sheet for 10 to 15 minutes before removing.  Release the cookies from the pan with a spatula.</p>
<p>These cookies are best kept in the refrigerator (if not eaten right away) or they freeze well.</p>
<p> Makes 15 to 18 cookies</p>

<p>It’s Friday, the end of the work week, so why not end it with a Paleo treat!  I actually made these back in August and haven’t posted them….shame on me because they are delicious!  My whole thought process was I didn’t want to shower you with treats since Paleo is not about the treats but all about the other good for you stuff.  I also knew I would be going away on vacation which meant I would be away from my kitchen which meant no cooking.  I did some extra cooking before my trip so I would have enough recipes to share with all of you.  So here we go…a Paleo treat that is so worth the wait!  I call it a brownie but it’s really almost like a fudgy chocolate bar.  It’s no bake and easy to put together and even easier to eat.  Warning: they can be a little addicting.  My little ones loved these and they weren’t around too long.  Which was perfectly ok with me because it meant they weren’t around too long for me to eat.  I was also perfectly ok with that because these bars are a whole lot healthier than some of those other things out there on the market for kids. </p>
<p>Enjoy these fudgy Paleo chocolate treats and I hope everyone has a wonderful weekend.  I’ll be back in my kitchen this weekend figuring out what Paleo recipe I can share with everyone next week….so stay tune.  Right now I’m thinking something involving sweet potatoes and maybe something involving salmon.  We’ll see.  I also have a Halloween treat brewing!  All very exciting and I can’t wait to share!</p>

<p><strong>Fudgy Cranberry Paleo Brownie Bars</strong></p>

<p>2 ¼ cup pecans, lightly toasted</p>
<p>½ unsweetened cocoa powder</p>
<p>½ teaspoon ground cinnamon</p>
<p>15 large medjool dates, pits removed</p>
<p>1 small to medium ripe banana (about 1/3 cup)</p>
<p>1 tablespoon vanilla extract</p>
<p>1 tablespoon honey</p>
<p>¼ cup dried cranberries</p>
<p>1/3 cup Enjoy Life Chocolate Chips, plus more to sprinkle on tops of bars</p>

<p><strong>Instructions:</strong></p>
<p>Blend pecans, unsweetened cocoa powder and cinnamon in food processor until combined and coarsely ground.</p>
<p>Add in dates and banana and process until blended into dry ingredients.</p>
<p>Process in vanilla and honey until well combined.</p>
<p>Stir or work in dried cranberries and chocolate chips with spoon or by hand.</p>
<p> Press mixture into a 8&#215;8-inch baking dish and sprinkle with additional chocolate chips, gently pressing down the chocolate chips.  Freeze for 1 hour, or until firm, then cut into squares. </p>

<p>As you read this post I will be flying high in the sky on route to Arizona&#8230;.to celebrate my birthday!  My mom called me a couple months ago with the idea of a getaway for my birthday.  Not just any getaway but a spa and hiking getaway to Sedona, Arizona.  It didn&#8217;t take much convincing and I&#8217;ve been excited ever since.  But I didn&#8217;t want to leave without a treat.  Since it&#8217;s my birthday a treat is needed and this treat comes in the form of a Paleo-ish Pumpkin Cookie Sandwich with Paleo Pumpkin Ice Cream sandwiched in between&#8230;.I&#8217;m telling you this is the perfect treat to celebrate a birthday with in a Paleo fashion.  Since I&#8217;m leaving on my birthday we had to celebrate in my house and my request was not to have the traditional cake or ice cream so instead we had these!  They were heavenly and I have to say I&#8217;m so happy it&#8217;s that time of the year for pumpkin.  I love the stuff!</p>

<p>Now let&#8217;s get to the treat.  First off the cookies!  Now there are a couple ways you can make these.  With or without the chocolate chips.  I did half the cookies with and half without.  Either way they are delicious.</p>

<p><strong>Paleo Pumpkin Spice Cookies</strong></p>

<p>2 cups blanched almond flour</p>
<p>1/2 teaspoon salt</p>
<p>1/2 teaspoon baking soda</p>
<p>1 tablespoon pumpkin pie spice, plus more for sprinkling on tops of cookies</p>
<p>1/2 cup pure pumpkin puree</p>
<p>1 small ripe banana, mashed</p>
<p>1/4 cup maple syrup</p>
<p>1 tablespoon vanilla extract</p>
<p>1/3 cup coconut oil</p>
<p>1/2 cup Enjoy Life Chocolate Chips (optional)</p>
<p><strong>Instructions:</strong></p>
<p>Preheat oven to 350 and line a baking sheet with parchment paper.</p>
<p>In a large bowl whisk together the almond flour, baking soda, salt, and pumpkin pie spice.</p>
<p>In a small bowl mix together pumpkin puree, mashed banana, maple syrup (if using), vanilla extract. </p>
<p>Mix wet ingredients into dry ingredients and stir until combine.  Then add melted coconut oil and stir to incorporate.  If you are using chocolate chips stir those into the batter.</p>
<p>Drop spoonful of batter (about 1 to 2 tablespoons in size) onto prepared baking sheet.  Sprinkle the tops of the cookies with additional pumpkin pie spice.  Bake cookies for 25 to 30 minutes until golden.</p>
<p>Cookies are best kept in a airtight container in the refrigerator. </p>

<p>1 can of coconut milk</p>
<p>1/2 cup pumpkin puree</p>

<p>Pour into the bowl of a ice cream machine and follow the directions of your ice cream machine. </p>

<p><strong>To assemble sandwiches:</strong></p>
<p>On one side of the bottom of a cookie place a scoop of ice cream.  Take another cookie and place flat side down on top of ice cream and slightly press down.  Eat right away or wrap in plastic wrap or airtight container and store in freezer. </p>
<p><em>Note: It&#8217;s best to assemble sandwiches when ice cream is soft.</em></p>

<p>I thought I would end the week with a little “treat”.  A Paleo treat of course.  These little bites I’m calling “cakies” because they aren’t really “cookies”.  These little “cakies” are soft which if you ask some people a cookie should not be.  But if you ask me, a cookies MUST be soft, not crunchy and crispy.  Everybody is different and prefers their cookies different so that is why I’m making up my own name and calling these a cakie instead of a cookie.  And because these little treats are soft, they are my little heaven in a Paleo diet world.  They have no added sugar, just the sweetness of the banana, and have the protein, fat, and fiber from the almond flour and almond butter.  I’m telling you these are great for someone like me that has an occasional sweet tooth and needs an “occasional” treat.  Even better, they are super easy to make and make only a small baking sheet of cookies.  So you don’t have to worry about having dozens of cookies around the house to tempt you. </p>
<p>My little ones actually helped in making these with me, so again super easy and fast to make.  And to top it off they have no eggs, so the little ones love them even more because they can lick the bowl.  The only problem in my house is the fight that incurs of who gets the last lick.  To solve that battle I took the last bite.  Luckily, just then the timer went off and the cookies were done and I had to eager little girls waiting for the cookies to cool off so they could try their creation.  Love having them in the kitchen with me! </p>
<p>I have to warn you these will be eaten very quickly, but if by any reason they aren’t I would suggest you store the rest in the refrigerator or freezer to keep them fresh.  Since they are so soft they don’t keep as well if kept out on the counter.</p>

<p><strong>Banana Chocolate Chip “Cakies”</strong></p>
<p>1 cup mashed ripe bananas, about 1 large banana</p>
<p>2 tablespoons creamy almond butter</p>
<p>1 tablespoons apple butter (optional)*</p>
<p>2 teaspoons vanilla extract</p>
<p>1 teaspoon baking soda</p>
<p>½ teaspoon ground cinnamon</p>
<p>Pinch of Salt</p>
<p>1 ¼ cup almond flour</p>
<p>¼ cup Enjoy Life Chocolate Chips (gluten-free, dairy-free, and soy-free – delicious)</p>

<p>Preheat oven to 350 degrees.  Line a baking sheet with parchment paper.</p>
<p>With a hand mixer, blend together the banana, almond butter, apple butter, vanilla extract, baking soda, cinnamon, and salt.  Add in almond flour and chocolate chips and stir to combine.</p>
<p>Using a 1 ½” ice cream scoop, scoop dough into even scoops and place on prepared baking sheet.  Bake for 11-14 minutes or until cookies are slightly golden on top.  Remove from oven and allow to cool slightly before removing from pan.  Again, these are soft so if you remove too soon you’ll have a soft cookie crumb mess.</p>

<p>Since going Paleo 3 weeks ago I have been looking for a go-to quick and easy snack for after my <a href="http://www.multiplydelicious.com/random/2011/07/ive-gone-crossfit/" target="_blank">CrossFit workouts</a>, but I also wanted to find something my kids could enjoy and I could add to their lunch box that was a healthy protein packed bar.  After playing around in the kitchen I think I found the perfect little bar.  And these bars are totally grain free.  The bars are made up of nuts and dried fruit and because I couldn’t resist, a little dark chocolate.  The fruits are mostly what makes these bars sweet, but I did add a little honey but you could leave out if you want.  Of course when you are first starting out on a Paleo lifestyle diet nuts and dried fruit should be limited so these are truly are a treat for me, like one of those things I only have once or twice a week.  However, for the kids they are a great lunchbox add on.  I have slowly tried to switch their diet to at least being gluten-free and as much organic as I can.  Not that they didn’t have a pretty much all organic diet from birth, but trying to make changes.  Especially after reading several things in regards to gluten in a child’s diet.  The switch to gluten-free hasn’t been a huge deal for my kids especially with more things on the market these days that are gluten-free friendly.  Vegetables on the other hand are still a battle in my house.  Hopefully one of these days that battle won’t be a battle at all.  Wishful thinking on my part!  Any ways, these bars have been a hit in my house and have been asked for in their lunch boxes all week.  I take that as a sign that they like them.  And as for me, they are a great little treat especially after a workout or even in the afternoon when I’m looking for an afternoon pick me up.  It’s a quick grab and go bar.      </p>

<p>1 ½ cups slivered almonds (unbalanced)</p>
<p>1 cup pecans, lightly toasted</p>
<p>1/3 cup ground flax meal</p>
<p>¾ teaspoon ground cinnamon</p>
<p>1/3 cup dried unsweetened cranberries</p>
<p>7 large medjool dates, pits removed</p>
<p>1/3 cup dried unsweetened blueberries</p>
<p>½ teaspoon vanilla</p>
<p>½ tablespoon honey</p>
<p>4-5 tablespoons water</p>
<p>1/3 cup <a href="http://www.enjoylifefoods.com/our_foods/chocolate_for_baking.html" target="_blank">Enjoy Life (Gluten-Free, Soy-Free, Dairy-Free) chocolate chips</a></p>

<p><strong>Instructions:</strong></p>
<p>Place almonds, pecans, flax meal, cinnamon, cranberries, dates, blueberries, vanilla in a food processor and process until well ground.  Then pulse in honey and 3 tablespoons of water.  You want the mixture to form into a ball.  If it’s not after the 3 tablespoons of water add in additional water and process until the mixture begins to form a ball. </p>
<p>Remove from food processor and stir in chocolate chips.  Then press into a 8&#215;8 inch baking dish. </p>
<p>Place bars in refrigerator for an hour and then slice into bars and serve.</p>
<p>Bars are best kept in the refrigerator.  Bars can also be wrapped individually and placed in an airtight container in the freezer.</p>

<p>I have a new gluten-free cookie to share with you today.  I&#8217;ve been on a gluten-free cookie kick lately and I owe all of that to my new favorite blog <a href="http://glutenfreegoddess.blogspot.com/" target="_blank">Gluten-Free Goddess</a>.  I&#8217;ve tried her <a href="http://www.multiplydelicious.com/thefood/2011/05/gluten-free-banana-chocolate-chunk-cookies/" target="_blank">Banana Cookies </a>(but added chocolate), they are one of my new favorite cookies, and I can&#8217;t forget the <a href="http://www.multiplydelicious.com/thefood/2011/02/quinoa-chocolate-chip-cookies/" target="_blank">Quinoa Chocolate Chip Cookies</a>which are right up there on the top.  I&#8217;m quite smitten to all of Karina&#8217;s gluten-free cookies.  She is quite the expert when it comes to gluten-free baking and I loved every single recipe I have tried from her site.  Including these Chocolate Chunk Cookies that are heavenly when they are warm and gooey.  They make you feel warm and fuzzy all over.  They make you want to curl up and eat every last one of them while reading a book or watching a good book.  Of course that&#8217;s why I froze half the batch so I wouldn&#8217;t do that.  When I have that sweet tooth calling my name I reach inside my freezer pop one in the microwave for a little bit and out it comes and a smile is suddenly on my face.  And when I&#8217;m done I often question if a second one is in need.  I&#8217;m soon interrupted by two little girls wondering what I&#8217;m eating and my little dream land of chocolate cookies is soon a distant memory.  That is until I have my next sweet tooth attack.</p>
<p>Seriously you have to try these!  And those who question that a gluten-free cookie can taste good, please give these a try so you can be proven wrong.  They are a little piece of chocolate yumminess!</p>

<p>1/2 cup certified gluten-free oat flour</p>
<p>1/2 cup sorghum flour</p>
<p>1/2 cup brown rice flour</p>
<p>1/2 cup tapioca starch (or potato starch)</p>
<p>1/3 cup organic cocoa powder</p>
<p>2 teaspoons xantham gum</p>
<p>1 teaspoon salt</p>
<p>2 teaspoon baking powder</p>
<p>2/3 cup organic cane sugar</p>
<p>1/3 cup light brown sugar</p>
<p>1/2 cup light olive oil</p>
<p>1 tablespoon vanilla extract</p>
<p>1/2 cup almond milk</p>
<p>1/2 cup vegan dark chocolate chunks</p>

<p><strong>Instructions:</strong></p>
<p>Preheat oven to 375.  Line two baking sheets with parchment paper and set aside.</p>
<p>In a large bowl whisk together the dry ingredients, oat flour through brown sugar. </p>
<p>Add in olive oil, vanilla, and almond milk to dry ingredients and stir to incorporate.  As you mix the dough pay close attention to the consistency.  If the dough is dry add more almond milk, a tablespoon at a time, and mix to combine until you achieve a smooth but sturdy cookie dough.  I added about 2 tablespoons to my dough.</p>
<p>Stir chocolate chunks into batter.  The batter will be stiff.</p>
<p>Using a tablespoon scoop, scoop dough onto prepared baking sheet about two-inches apart.  Using palm, gently press down the tops of the cookies.  Only to flatten the dough slightly.  Press a couple additional chocolate chunks into the tops of the cookies, if you like.</p>
<p>Bake in the center of a preheated oven for 15 minutes or until the cookies are set.  They will still be slightly soft in the center.  If you bake two pans at once, rotate the pans half way through baking.</p>
<p>Remove the pans from the oven, and allow the cookies to cool and &#8220;set&#8221; for a few minutes.  Transfer cookies to a wire rack to cool completely. </p>
<p>Cookies are best stored in an air-tight container and eaten with two days.  I froze most of the cookies and take out of the freezer when my sweet tooth strikes.  I especially love these cookies slightly warm&#8230;yummy!</p>

<p>Once again my fruit basket had very ripe banana&#8217;s waiting for me to use this weekend.  I was in a loss of what to use them for but knew I wanted something sweet.  This weekend was a busy weekend filled with lots of cleaning and gardening.  Mind you the whole time I&#8217;ve been battling the cold my little ones and husband had two weeks prior.  My body decided in the worse possible time to finally give into the germs that surrounded me for weeks.  Running nose and all I still tackled the much needed cleaning and gardening around the house but I also tackled some cooking and baking.  Actually the cooking and baking was the best part about the whole thing.  Again, knowing I wanted something sweet for the ripe bananas I decided to use them for a cookie.  Not just any cookie though a gluten-free and dairy-free cookie.  Are you nervous by those two things&#8230;.don&#8217;t be because I have to tell you these cookies are delicious and I give all credit to <a href="http://glutenfreegoddess.blogspot.com/2008/01/banana-cookies.html" target="_blank">Karina from Gluten-Free Goddess</a> where I found the recipe.  I did make changes based off what flours I had in my pantry.  I also used less sugar and added chocolate chunks because after all bananas and chocolate are a perfect match in my opinion.  These cookies are the perfect balance and you would never know they are not only gluten-free but dairy-free too.  They are moist and the bananas give them the perfect amount of sweetness.  Of course the chocolate chunks help too especially when they are right out of the oven and wooey gooey.  My little ones had the wooey gooey chocolate all over them too.  After giving into them begging for one right away I didn&#8217;t take long for little hands, face, teeth and everything else covered in chocolate.  And with chocolate covered everything they were laughing at the same time&#8230;.the little things that make us happy!  Got to love those things! </p>
<p>Enjoy these cookies, I know we did.  They will be made again.  I&#8217;m actually hoping for the banana&#8217;s in my fruit basket now to ripen sooner than we can eat them&#8230;.shhhhh don&#8217;t tell anyone. </p>

<p>Mix together mashed bananas, olive oil, vanilla extract and vanilla almond milk.  Let sit for 10 to 15 minutes to allow the the oats to soften.</p>
<p>Meanwhile, whisk together the dry ingredients sorghum flour through cinnamon.  Add banana mixture to dry ingredients and mix to combine.</p>
<p>In a small bowl, mix together the Ener-G egg replacer with almond milk and stir to combine.  Add to the bowl and mix until egg mixture is incorporated into batter.  The dough will be sticky.</p>
<p>Stir in pecans and chocolate chunks.  Refrigerate batter one hour &#8211; or more.</p>
<p>Preheat oven to 375.  Line two baking sheets with parchment paper. </p>
<p>Remove dough from refrigerator and use ice cream scoop to form cookie rounds.  Place on parchment lined baking sheets.  Bake 15 to 20 minutes rotating pan half way through baking.  I baked mine for 15 minutes, but every oven varies.  They should be lightly golden. </p>
<p>Remove from oven and gently press down on cookies to flatten them slightly, but only if desired.  Let cool on pan, then using a then spatula, loosen and move them to a wire rack to cool. </p>

<p>Store in an air-tight container.  These can also be frozen and taken out later to enjoy.  I put half of the cookies in the freezer and half in an air-tight container in the refrigerator and heated them up slightly in the microwave before eating&#8230;.yummy!</p>

<p>What do you get when you have lots of blueberries in the refrigerator and you have a rainy morning?  Oh&#8230;.and your kids are quietly watching Cinderella.  You get these Berry Pecan Bars!  Saturday I was going through loads of cooking magazines.  By the way, I have slight obsession with cooking magazines&#8230;ask my husband, I have tons!  In attempts to slightly clean my collection I ran across this recipe in one of my Fine Cooking magazines.  It happen to be the perfect option since blueberries were on sale at Whole Foods this weekend.  I made some slight changes from the original recipe.  The original recipe used hazelnuts instead of pecans and it called for all blueberries.  I of course opted for pecans and a mix of blueberries and raspberries.  I opted not to do gluten-free with this recipe but I did use whole grains by using white whole wheat flour for most of the recipe.  These take a little time and love but in the end they are worth it.  Yum!  A nice summer dessert and probably super yummy with a scoop of ice cream.  We didn&#8217;t have any in the freezer but if we did I&#8217;m sure it would be topping these little bars.  Next time I&#8217;ll be sure there is some in the refrigerator. </p>

<p>For Crust and Topping:</p>
<p>1 cup pecans</p>
<p>1 1/2 cups white whole wheat flour</p>
<p>1/2 cup all-purpose flour</p>
<p>1 cup confectioners&#8217; sugar</p>
<p>1/2 teaspoon ground cinnamon</p>
<p>2 teaspoon baking powder</p>
<p>1 cup cold unsalted butter, cut into cubes</p>
<p>1 large egg</p>
<p>1 large egg yolk</p>
<p>1 teaspoon vanilla extract</p>
<p>For Filling:</p>
<p>4 cups fresh blueberries, picked over</p>
<p>1 cup fresh raspberries</p>
<p>2/3 cup organic cane sugar</p>
<p>1/3 cup arrowroot (or cornstarch)</p>
<p>2 teaspoon lemon juice</p>
<p>1/2 teaspoon ground cinnamon</p>
<p>1/4 teaspoon salt</p>

<p><strong>Instructions:</strong></p>
<p>Make the Crust and Topping:</p>
<p>Lightly grease a 9&#215;13-inch baking pan.  Line the bottom and sides with a sheet of parchment, leaving a few inches of paper hanging over the edges of the two long sides to help remove the finished bars.</p>
<p>Roughly chop 1/2 cup of the pecans.  Set aside.  Put the remaining 1/3 cup pecans in a food processor and process until finely ground; put them in a large bowl.  Add the flours, confectioners&#8217; sugar, cinnamon and baking powder and stir with a fork to blend.  With pastry blender or two knives, cut in the butter until the largest lumps are the size of peas.  Lightly beat the egg and yolk and add all but 2 tablespoons of the egg to the butter-flour mixture.  Add the vanilla and gently toss with your fingertips until the mixture clumps together.  It should be uniformly blended, moist, and crumbly.  If the dough looks dry and floury, mix in a little more beaten egg.</p>
<p>Position rack in center of the oven and heat the oven to 350.  Divide the dough into two portions, one slightly larger than the other.  Using floured fingertips, pat larger portion into the bottom of the prepared pan, pressing firmly, and refrigerate for 15 to 20 minutes.  Cover the remaining portion with plastic and refrigerate as well.</p>
<p>Remove the pan from the fridge and prick with form.  Bake until edges are golden and pastry is dry and light brown, about 20 minutes.  Let cool completely on a wire rack before filling (otherwise, the bars will get soggy).</p>
<p>Make the Filling and Bake:</p>
<p>In a large bowl, combine the berries, sugar, arrowroot, lemon juice, cinnamon, and salt.  Toss gently to thoroughly coat the berries and then scatter the filling onto the cooled crust.  Spread berries in an even layer.  Crumble the reserved dough over the berries; it won&#8217;t cover everything.  Bake 25 minutes and then sprinkle on the reserved pecans.  Continue baking until the topping is puffed and golden and the filling is bubbling not only near edges but also close to the center of the pan, another 50 minutes.  Put the pan on a wire rack and let cool completely.  Use the parchment to lift the whole batch out and then cut bars. </p>
<p>Makes 12 large bars or 48 bite-size bars</p>

<p>If you are in a rush and need a semi homemade but oh so easy cookie recipe&#8230;I&#8217;ve got one!  All you need are few ingredients and little bit of time and you will have a batch of yummy cookies.  You can use a chocolate or yellow cake mix for these cookies too.  So don&#8217;t worry if your not a chocolate lover try yellow.  Either way they turn out yummy.  I personally like the chocolate mix because it gives the cookies a little bit of a brownie like texture.  And I&#8217;m a brownie lover!  Another thing, I made these gluten, dairy, and soy-free but if you don&#8217;t have allergies to these things go ahead and use a regular box of cake mix, butter, and eggs (I&#8217;ve listed below where you substitute).  Either way these will still turn out great and it will take only a short time out of your schedule.</p>
<p>To all you wonderful Mom&#8217;s out there, I hope you had a very special Mother&#8217;s Day!  I hope you were able to spend your day with the ones you love the most!  I know I was very fortunate to spend it with two amazing little girls and a wonderful husband.   </p>

<p>3 tablespoons almond milk (or milk of choice)</p>
<p>2/3 cup non-dairy chocolate chips (or regular)</p>

<p><strong>Instructions:</strong></p>
<p>Preheat oven to 350.  Line two baking sheets with parchment paper and set aside.</p>
<p>In a small bowl add together the Ener-G Egg Replacer and water and mix thoroughly.</p>
<p>In a large bowl, combine butter, coconut oil, cake mix, oats, egg mixture (or eggs), and milk.  Beat with an electric mixer on medium speed until combine.  If dough is still dry, add a tablespoon at a time of milk until dough forms.  Stir in chocolate chips.</p>
<p>Drop dough by rounded tablespoons about 2 inches apart onto prepapred baking sheet.  Bake 10 to 15 minutes or until edges are done.  The center of the cookies will still be soft.  You don&#8217;t want to over cook.  Transfer cookies to a wire rack and let cool.  Makes about 2 dozen cookies.</p>

<p>Happy &#8220;Good&#8221; Friday everyone!  As I mentioned in my post on Wednesday, this past weekend I spent time recovering from my long trip to Asia for work.  I can’t tell you how great it feels to be back home.  Thanks everyone for warm wishes welcoming me home too.  You guys are awesome!   It’s so nice to be home and back to all the family routines and rituals.  And I’m hoping I’ll be home for awhile….there is talks about an October trip but I have my fingers crossed (and toes) I won’t be a part of that trip.  16 plus days is too long to be away.  Keep your fingers crossed for me too.</p>
<p>I usually spend my weekends in the kitchen but last weekend I spent it mostly sleeping and hanging out with the family with very minor baking or cooking.  I did try to attempt gluten-free cinnamon rolls (twice) but it was a disaster!  If anyone has a gluten-free (dairy and egg free) cinnamon roll recipe to recommend let me know.  I&#8217;ve been craving cinnamon rolls lately (my huge weakness).  So as I was saying, I didn’t do much in the kitchen but last night as I was craving something sweet.  I also wanted something the whole house could all have as a snack, so I came up with these little clusters.  These are kind of like a cookie, but kind of not.  It&#8217;s basically granola in the shape of a cookie.  They are super easy to make and are a healthy little snack (or dessert) for everyone in the family to enjoy.  And the best part about these little clusters is you can really put whatever you like in them.  Play around with them and have fun.  I placed dried blueberries in mine but cranberries or raisins would be a great alternative.  And if you don’t like nuts, maybe do all dried fruit?  If you do, let me know how they turn out.   And add some flaxseed instead of the nuts too.  Again, have fun with these!  And by the way, these were great in satisfying a sweet tooth!  At least they were for me. And I like to think they were a healthy little treat too.  These are kid approved too.  My 3 year old toddler twins both gave them the “yummy” seal of approval.</p>

<p><strong>Instructions:</strong></p>
<p>Preheat oven to 300 degrees.  Line a baking sheet with parchment paper, set aside.</p>
<p>In a large bowl toss together the oats, quinoa flakes, chocolate chips, blueberries, almonds, pumpkin seeds, pecans, salt and cinnamon.</p>
<p>Place the honey, maple syrup, oil and vanilla in a saucepan over low heat and cook for 1–2 minutes or until runny. Pour over the oat mixture and mix well to combine. Spoon heaped tablespoonfuls onto prepared baking trays. Bake for 35–40 minutes or until golden. Allow to cool completely on trays.</p>
