Why is it that when I sit down to write a blog post that I come to a complete loss of words?  Its like my brain fogs over!  Days leading up to a post little things pop into my head that I try to remember to mention to you guys.  Does this mean I’m getting old?  You may laugh but I actually downloaded the Lumosity app recently onto my ipad so I can freshen up my brain.  I like to tell myself the reason why I forget so much lately is because I have so much on my brain.  I will tell you in a couple weeks if my new app pays off and I can start to remember things.  Ha!

So did I tell you guys I hurt my shoulder at crossfit?  It happened a month or so ago on the muscle-up rings and the silly person I am I ignored it and kept wodding and going full speed ahead.  Duh!  Stupid!!  Note to all of you out there who might have tweaked something and wondering if you should lay low for awhile….lay low!!  I have a moderate sprain now in my good shoulder which has had me doing a lot of squatting and abs….I can honestly say after one week of doing that I am tired of squatting and doing abs.  I watch my fellow crossfit buddies having fun in the wods and all I want to do is join them.  Baby steps I keep telling myself….and a lot of ice, rest, and mobility.  I have started to add a little more arm related stuff in but it’s hard not to go all in.  A new way of training my brain that most of us crossfit folks don’t have.

One more thing, ok maybe that Lumosity app is coming in handy…just need a little time to warm up.  I’m doing another Whole30 with one of my good crossfit buddies.  We are on day 15, right Stacy?  It seems to start running in together.  Last January I did one and it felt great.  This one has been a little harder for me in weird ways.  Like I miss random weird things.  I’m getting over it but I’m looking forward to a glass of red wine when its all behind us.

Now, Burgers….once again this is an easy weekday kind of recipe.  Doesn’t take long and you have dinner….or even lunch for the next day.  I used a sugar-free bacon (since I’m doing Whole30) and found a great brand at my local Whole Foods called Pederson’s.  They have a PALEO BACON!!!!  What?!  I was dancing in when one of my crossfit buddies told me about it.  One happy girl especially when I’m on Whole30.


Chicken Bacon Burgers with Brussels Sprout, Apple, Avocado Slaw

Yield: 4 burgers


  • 1 pound ground chicken
  • 1 tablespoon gluten-free dijon mustard
  • 1/4 cup green onion, diced
  • 1/4 cup apple, finely diced
  • 1 garlic clove, minced
  • 3 slices bacon, cooked and diced
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon fresh black pepper
  • 1/8 teaspoon red pepper flakes, optional
  • 1/2 pound Brussels Sprouts, ends removed and shredded
  • 1/3 cup apple, thinly sliced into strips
  • 1/2 avocado, cubed
  • sea salt and fresh pepper to taste


  1. In a large bowl combine ground chicken, dijon mustard, green onion, apple, garlic, cooked and diced bacon, salt, black pepper, and red pepper flakes if using. Mix ingredients until fully incorporated, best if you use your hands. Form mixture into 4 even sized burger patties.
  2. Heat an indoor grill pan on medium-high heat. Once pan is heated add burgers and grill 3 to 4 minutes on one side and flipping to grill on the other side for an additional 4 minutes or until cooked through. Remove from pan and set aside.
  3. In a small bowl, toss together shredded brussels sprouts and apples. In a small pan heat 1 teaspoon bacon grease or coconut oil. Add brussels sprout and apple mix and stir often until the brussels sprouts are slightly wilted and apples are tender. Remove from pan and stir in avocado. Season with sea salt and pepper to taste.
  4. Serve burgers with slaw and enjoy.


To shred brussels sprouts, thinly slice from the head of the brussels sprout stopping just before the base. Discard the base. Using fingers break up the brussels sprout strips/shred.

    You can just eat the burgers without the brussels sprouts. :)
