This week is going to be filled with Giveaways!!  Yay!  I’m pretty excited!  Every day this week come back for your chance to win some goodies.  First up is a giveaway for some yummy Paleo Treats from Sweet Pea Bakery.  I was introduced to Kathryn from Sweet Pea Bakery by Philip from RadBar.  I was having a meeting with Philip and he had a bag of goodies from Kathryn.  What a treat!!  I had just started a Whole30 challenge with some friends at CrossFit so I quickly put them in my freezer to save for after the challenge.  As soon as it was up I quickly thawed the goodies out and YUMMY!  Kathryn’s Paleo Chocolate Chip Cookies are my favorite!  Soft and chewy… the perfect paleo cookie in my opinion.  Now a little about Sweet Pea Bakery….
Sweet Pea Bakery opened in the summer of 2013 in Raleigh, NC and is one of the first bakeries in the Triangle to offer both classic and PALEO treats.  They use the finest local, organic ingredients whenever possible and cater to any sweet tooth.

The owner and head baker is Kathryn Volpe, a consultant-turned-baker, who also happens to be a CrossFitter.   A little background on Kathryn: She has a serious sweet tooth and dessert is a nightly staple in her family.  She discovered the joys of baking while in high school but only considered it a hobby for several years.  After college, she began working as a healthcare consultant all over the country and eventually moved to Raleigh.  In 2011, she discovered CrossFit and loved the mental and physical challenges it presented (she’s currently a coach at CrossFit Invoke in Raleigh).  She started following the paleo diet for her regular meals but couldn’t find any paleo desserts she liked, so she started creating some of her own using nut flours and natural sweeteners.  Friends and fellow CrossFitters began gobbling up her paleo treats, and after five years in the corporate world, she decided to take the plunge and open Sweet Pea Bakery.  You can read more about Kathryn’s story here.
Although Sweet Pea Bakery doesn’t currently have a storefront, they ship products all over the U.S. and will arrange local delivery/pick-up.  You can also request special orders for any occasion including birthday cakes, ugly sweater party trays, gender reveal cupcakes, and more!  And with the holiday season upon us, Sweet Pea Bakery variety packs make great hostess gifts!

I have battled exhaustion for over 10 years. I thought it was just because I was such a busy mom. Not so says my doctor. My adrenals are shot. I’ve been making healthier choices in my lifestyle and that’s helped a lot, but not all of the way. Tonight, while researching the internet, I first learned about Paleo cooking. I need to try this. But am more than a sweet tooth kind of woman…I adore baked goodies. I wondered how I could make the shift. (such a sorry lack of imagination) I had no idea you could still have yummy treats and eat paleo. Yay!
