Banana_Pancakes

I want to thank everyone from the bottom of my heart that have purchased the new e-cookbook Paleo Recipes for Every Day! I hope you have been enjoying it as much as I enjoyed creating it.  I apologize for not being around sooner since the launch of the e-book too but I was down with the flu last week.  Darn flu!  I don’t wish that on anyone!  I guess with all the little germs floating around from my monkeys that it was only a matter of time before it caught up to me.  I promise I am going to make it up to you with this post….because we have a giveaway folks!  Yay!  Ya’ll love a giveaway, right?  I don’t do many here on the blog because I’m super selective with the ones I do.  I have to believe in the product 100% before I share with you all out there.  And with that being said I am a full believer in Swiss Diamonds amazing cookware!  I was lucky enough to actually take a tour of their US headquarters here in Charlotte.  Not only do they have amazing products but they have an amazing group of people who love the product.  Trust me, coming from a person with a product background its refreshing to see passion behind a product.  Once I got my hands on the product and got it in my own kitchen I see why, it really is amazing!  Their grill pan even got my husband in the kitchen cooking, which is something that doesn’t happen very often!  I think he’s used the grill pan more than I!  My favorite happens to be the Double Burner Griddle, which I made these pancakes with.  It is a fantastic alternative to messy electric griddles but with all of the benefits. Cook pancakes, eggs, sausage and bacon side-by-side on this flat griddle – or make roasted vegetables, or anything that requires a little extra room on the stovetop. When you are done, simply wash it with hot soapy water for fast clean-up. No more worrying about getting the cord wet or cleaning batter drips off the sides of your electric griddle, or having another appliance to take up room in your cabinets.  Trust me, I know this all too well!

Now for the recipe for these pancakes that happen to be a new favorite in my house.  I made them for my little munchkins on Valentine’s Day (hence the heart bananas) using the amazing Double Burner Griddle from Swiss Diamond.

Banana Cinnamon Pancakes

1/2 cup ripe banana, mashed (about 1 banana)

2 eggs

1 tablespoon almond butter

1 tablespoon maple syrup (optional)

1 tablespoon canned coconut milk

1 teaspoon vanilla extract

1/2 cup almond flour

2 tablespoon coconut flour

1 1/2 teaspoon ground cinnamon

1/4 teaspoon sea salt

1/4 teaspoon baking soda

Instructions:

Heat griddle or non-stick skillet over medium heat.

In a large bowl add banana, eggs, almond butter, maple syrup, coconut milk, and vanilla and using a hand mixer combine the ingredients until smooth and blended.

Add almond flour, coconut flour, cinnamon, salt and baking soda to the wet ingredients and mix again with hand mixer until everything is incorporated.

Melt a little coconut oil on the heated skillet. Then add about 1/4 cup to about 1/3 cup batter to the skillet to make a pancake size circle.  Allow the pancakes to cook on one side for 3 to 4 minutes.  You do not want to flip the pancakes too soon or they will break apart.  So allow them to cook on one side until golden.  Then carefully, using a spatula, flip the pancake over to cook on other side.

Continue with remaining batter. And AGAIN, these will need to cook on the skillet longer than traditional pancakes so be patient.  I know its hard, but I promise it will be worth it. :)  Also, keep the heat on medium to avoid them from burning.

Top with topping of choice and enjoy!

Makes about 4 to 5 pancakes.

    I would love to own any of these amazing products but I think the most practical would be the Induction non-stick square grill fry pan! I only have a small George Foreman grill and would love to experiment with a grill pan for lots of paleo creations! Those pancakes look to-die-for btw!     Doh! I posted a comment on their website by mistake. That will teach me to pay attention. Thats why I use your recipes…the spell it out for me! Lol! I would love a new 5 quart square roster pan with handle and with the square lid. I currently have a stainless steel one that I swear at – at least twice a week. Everything sticks, doesnt heat even and is a pain in the rear to clean! I screw up to much in the kitchen for everything to stick all the time…life would be so much better with this pan. :) Ahhh…here is to dreaming of no moreajax for cleaning!!

    I’d LOVE the non-stick Large Roasting Pan (13.75 x 10.25). I have a really hard time cleaning my roasting pan and it is starting to rust on the bottom. (YUCK!)
