Last week I promised another recipe showing just how you could use the Sweet Potato Carrot Cakes as something more than a “cake”.  Well here you go a Sausage and Egg Sandwich using last weeks Sweet Potato Carrot Cakes.  It is a little on the simple side but that’s the pure beauty of it all….at least that’s what I like to tell myself.  It can turn a regular breakfast into a beautiful thing too.

Now before I get to the recipe I have to share something that was pretty freakin awesome.  I was a nervous wreak but on Saturday afternoon I competed in my very first CrossFit competition.  Eek!  That was me squealing because it was pretty darn awesome.  It was 150 athletes both women and men across the Charlotte area competing in a big WOD consisting of 500m row, 40 kettlebell swings, 30 box jumps, 20 burpee plate jumps and 10 HSPU (or 10 wall balls – scaled).  I can’t even begin to tell you how much fun it was but most of all  how much I love the CrossFit community.  The athletes were all amazing but what stood out the most was how everyone cheered everyone on and supported you as you battled the WOD.  If athletes who were in the WOD finished they went back to cheer on their fellow athletes, even if they didn’t go to the same box!  Pretty awesome if you ask me!  It’s gives you that warm and fuzzy feeling all over.  I love CrossFit!

Sausage and Egg Sandwich….Paleo Style

2 - Sweet Potato Carrot Cakes

1 local sugar-free pork sausage patty

2 pastured free-range eggs (local is you can)

Instructions:

In a nonstick skillet cook sausage until cooked through and no longer pink.  Remove sausage and set aside keeping the yummy pork grease in skillet and keeping it over a medium heat.  In a small bowl scramble eggs and pour into the heated skillet and cook until desired texture.

In between the previously cooked sweet potato carrot cakes sandwich cooked sausage and eggs.

Serve immediately and bite in and enjoy!

Makes 1 Sausage and Egg Sandwich
