Rosemary-Cheddar Drop Biscuits

What a week so far! Hubby is out of town for the week and the girls have some how come down with a summer cold. Fun times in my house. Lots of runny noses and sneezing going on. But I have to say you would never know the girls are sick. They still go 100 miles an hour, run around the house, and giggle non-stop. I have to say, I’m a lucky mom to have such great little girls that even when they are sick are still happy. We do miss daddy though. The girls keep saying “is daddy in the plane”? I keep saying yes, but I’m wondering how long they will think that daddy’s in a plane? Regardless, we are all excited to have him back home in a few days.
So let’s talk biscuits! I love biscuits! I have since I was a little girl and I give my grandmother complete credit for this love. I would go to my grandmother’s house and she would always have a fresh pan of biscuits either waiting for me or in the oven. So thanks Bluemama (that’s what I call my grandmother) for creating this love for all things biscuits. I do have to say when I’m craving biscuits I like to make drop biscuits because they are easier then rolling and cutting in my opinion. With a busy house and especially this week with no hubby and the girls being a bit under the weather I prefer taking the easy route with biscuits. So these drop biscuits were perfect! Then you add rosemary and cheese what could be better!? These are super yummy and I do think I’m creating biscuit lovers with the girls because they especially liked these. The funny thing is as soon as I pulled them out of the oven they knew they were biscuits. I guess that really tells you that I love biscuits. Now as always I tried to make these a little more healthier by adding white whole wheat flour and using Greek yogurt instead of sour cream, but as always you can use all-purpose for the whole recipe and use sour cream if you don’t have Greek yogurt. I also went for the low-fat cheese. I can’t tell the difference but my husband can so sometimes I add half regular and half low-fat. That way we make everyone happy. If your looking for an easy biscuit recipe give these a try. And as always enjoy!
Rosemary-Cheddar Drop Biscuits
1 cup all-purpose flour
1 cup white whole wheat flour
2 tsp baking powder
1/4 tsp salt
2 tsp sugar (optional)
1 cup shredded low-fat sharp cheddar cheese
1 tbsp finely chopped fresh rosemary
1 cup 2% Greek yogurt (or sour cream)
6 tbsp unsalted butter, melted
Instructions:
Preheat oven to 450. Spray a baking sheet with parchment paper.
In a large bowl, combine flours, baking powder, salt, sugar, cheese, and rosemary. Add yogurt (or sour cream) and butter, stirring just until dry ingredients are moistened. Drop batter by heaping tablespoonful onto prepared baking sheet. Bake for 8 to 10 minutes or until golden brown.















Any chance I could get away with using all whole wheat flour??

You can give it a try but I would recommend if you can maybe try using half white whole wheat and half whole wheat. That way they aren’t as dense and you have the sweeter flavor from the white whole wheat flour.

I’m sure these would work pretty well in a muffin tin. Even better in a mini muffin tin for a bite size muffin. I would just watch how long you bake them. Just keeping a closer look.
