I hope everyone is having a wonderful Father’s Day so far. It’s such a special day for all those daddy’s out there. I hope everyone is spending the dad spoiling their dad’s. We have been lucky because my in-laws are in town visiting. It’s great that my husband and dad can spend the day together. It’s been a busy weekend so far and we have spent time at the zoo and of course the beach. It’s been a lot of fun and stay tune to more pictures on the random page coming up later this week.
So let’s get to this amazing bread. All I have to say is…..move over summer time apple pie and make room for apple pie bread! Not sure about you but this time of the year it was normal to have a apple pie or two served. If it wasn’t apple it was peach, since we had a lot of those in Georgia. I have to admit pie isn’t my first choice but I love a slice of warm quick bread right out of the oven. The apples in this bread makes it super moist but I have to say the best part is the crunchy streusel topping. And as you all know I love to add whole grains where I can so I used half white whole wheat flour and half all-purpose, but remember you can use all-purpose for the whole recipe. The whole family loved this recipe and was finished in no time. They loved it so much that I actually have another loaf in the oven right now. It will make your house smell super yummy too.

Apple Pie Bread
1/2 cup unsalted butter, at room temperature
1 cup sugar
1/4 cup buttermilk
2 tsp baking powder
1 tsp apple pie spice (or cinnamon)
2 eggs
1 tsp vanilla
1 cup white whole wheat flour
1 cup all-purpose flour
1/2 tsp salt
2 cups shredded, peeled apples
1/2 cup chopped pecans
Streusel-Nut Topping
1/4 cup packed light brown sugar
1 tsp cinnamon
3 tbsp white whole wheat flour
2 tbsp unsalted butter, softened
1/3 cup chopped pecans
Instructions:
Preheat oven to 350. Spray a 9x5x3-inch loaf pan; set aside.
In a large bowl, beat butter with an electric mixer on medium to high speed for 30 seconds. Beat in sugar until combined. Add buttermilk and baking powder; beat until well combined. Add flour, cinnamon and salt; beat until combined. Stir in apples and nuts.
For streusel topping: In a small bowl, combine brown sugar, cinnamon and flour. Using a pastry blender, cut in 2 tbsp butter until mixture resembles coarse crumbs. Stir in pecans.
Spoon batter into prepared pan; spread evenly. Sprinkle streusel topping over batter and press down slightly. Bake for 55 to 60 minutes or until a wooden toothpick inserted near the center comes out clean. Cool in pan on a wire rack for 10 minutes. Carefully remove from pan. Cool completely on wire rack.
