Pesto Cheese Phyllo Bites

Hope everyone is having a great week! I have to say I’m happy we are getting closer to the weekend. Speaking of weekend…as the weather warms up are you planning a party? These delicious little bites are a mouth full of delight and perfect to have for an appetizer. They have a nice and creamy filling with the combination of the cream cheese and garlic herb goat cheese. Top them with pesto, sweet bell pepper and basil and enjoy! The best part about these are that they are super easy and quick to make. Especially if you go with the prepackaged frozen phyllo shells (like I did here). You can even make the filling ahead of time and refrigerate it. Then right before your guests arrive place them in the phyllo shell and bake. Again, these are great!

Pesto Cheese Phyllo Bites
30 - 1 3/4-inch baked minature phyllo shells (two 2.1 ounce packages)
4 ounce(s) of garlic herb goat cheese, softened
3 ounce(s) of Philadelphia Cream Cheese (regular or 1/3 less fat), softened
2 tsp. of pesto, homemade or store-bought
1 egg
1 tsp. of all-purpose flour
1/4 cup(s) of sweet red bell pepper, diced
2 tbsp. of pesto, for topping
3 tbsp. of fresh basil, finely chopped
Instructions:
Preheat oven to 325. Place phyllo shells on a large parchment lined baking sheet.
For custard filling, in a mixing bowl, combine goat cheese, cream cheese, pesto, egg, and flour. Beat with an electric hand mixer on medium speed until smooth.
Spoon mixture into phyllo cups, using a scant 1 or 2 teaspoons of mixture for each cup.
Bake for 15 to 18 minutes or until shells are lightly browned.
Garnish with a dollop of pesto, sweet bell peppers and basil. Serve warm…..and enjoy!!

ah, so dainty! i think you could fill those amazing little phyllo cups with belly button lint and i’d still make a beeline for ‘em.
