Sausage and Cheese Biscuits (Breakfast Biscuit)

Weekends, aren’t they great?! I was really forward to this weekend. Especially after a long week at work that was filled with meeting after meeting. It’s been a beautiful weekend here in South Florida, thankfully! Sunny and not to warm with a cool breeze. Couldn’t have asked for anything better. I have to say the daylight savings has thrown us off a little. It’s weird to look at the clock and it’s later then what your body is telling you. It also makes it hard for the little ones. It will take a few days but hopefully we’ll get back to the normal routine.
This morning we woke up a little later due to the time change. After making the girls breakfast I decided to make these biscuits for the hubby. They are pretty easy to make and combine everything into one biscuit. They will be great for the coming week as a quick option for breakfast. Just heat and go. We might need it too as we all adjust to the new time. As always I tried to add whole grains, but you can use all-purpose for the whole recipe too. I also tried to go low-fat where I could. That means low-fat buttermilk and low-fat cheese. I also went for chicken sausage instead of pork. I love the local Whole Foods because they have a great variety of sausages and with different flavors. If you have the luxury of having a local market with the same you can add any of choice. These are great served warm and as my husband likes them…with lots of butter. You can tell he’s a Southern Boy at heart.

Sausage and Cheese Biscuits (or Breakfast Biscuits)
1 1/2 cups all-purpose flour
1 1/2 cups white whole wheat flour
1 Tbsp baking powder
1/2 tsp baking soda
1 tsp sugar
1/4 tsp salt
1/2 cup (1 stick) unsalted butter, cold and cubed
1 cup buttermilk
1 cup cooked mild chicken sausage, crumbled
1 cup cheddar cheese, shredded
1 Tbsp fresh chives, chopped
Instructions:
Preheat oven to 425 degrees.
In a medium-sized mixing bowl whisk together flours, baking powder, baking soda, sugar, and salt. Add the butter cubes and work in with a pastry blender or two forks until crumbly.
Add sausage, chives, and cheese and mix to incorporate. Add buttermilk and mix everything until well combined.
Transfer dough to a lightly floured surface and pat into a 8×10 rectangle and 3/4″ thick. Cut dough into 2″ squares. Place squares on a parchment lined cookie sheet 1″ apart. Bake for 12 to 15 minutes or until slightly golden.
Best served warm with butter.
