Outrageous Oatmeal Dark Chocolate Cookies

Once again my sweet tooth struck this weekend.  I tried to tell myself that these cookies would be ”healthy”.  I mean it has oatmeal, whole grain flour, and dark chocolate.  Does that count as healthy?….probably not but I liked to believe they are.  I have to say they are super yummy and satisfied my sweet tooth perfectly.  I probably need to place the rest in the freezer so when my sweet tooth comes along again I can reach in and have a “healthier cookie”.  Ok, yes I’m still believing they are healthy….it makes me feel a little bit better when I bite into one.  I also worked out…will that out weight the cookie sweet tooth?  Ok, I’ll stop.  Try these cookies, they are super yummy!

Outrageous Oatmeal Dark Chocolate Chip Cookies

1 1/2 cups old-fashion rolled oats (not quick cooking)

1/2 cup white whole wheat flour

1/4 tsp baking powder

1/4 tsp baking soda

1/4 tsp salt

6 Tbsp unsalted butter, room temperature

1/2 cup pack brown sugar (light or dark)

1/4 cup sugar

1 large egg

1 tsp ground cinnamon

1 tsp vanilla extract

1/2 cup good-quality dark chocolate (70% solids), chopped

Preheat oven to 350 degrees.  Whisk together oats, flour, baking powder, baking soda, and salt; set aside.  Beat butter and sugars until light and fluffy.  Add egg, cinnamon and vanilla; beat until combined.  Gradually add oat mixture; beat until combined.  Stir in chopped chocolate. 

Drop dough by round tablespoons, 2 inches apart, onto two baking sheets lined with parchment paper.  Bake until cookies are golden but still soft, about 12 to 16 minutes.  Cool 5 minutes on sheets; transfer cookies to a wire rack to cool completely.
